Question 1:
Is there a screen that will show processes sorted by CPU?
Answer:
The Global Summary screen does. Use CTRL+B for back and CTRL+F for forward (also +/-) to scroll the screen. Toggle (T) to the "graphical" view and see more processes and less global stats.
